Chicken Stuffed Shells

My mother always used to make this for my family as I was growing up.
We are from an Italian family, so the idea of stuffed shells was already great to us, but this is a twist on them that is much different than the traditional red sauce and ricotta cheese favorite, yet still a hearty, home cooked, comfort food too.

1lb. boneless skinless chicken breasts, 1 Box of jumbo shells, 1 box of stovetop chicken flavor stuffing, 2 cans Campbell’s cream of chicken soup, 1 can Campbell’s Cream of Mushroom Soup, 2 cups chicken broth, 1 cup Hellman’s mayonnaise.

Bake chicken in shallow glass pan @ 350 degrees for about 20 minutes or until cooked through. Dice into small pieces. Boil shells according to package and place in cold water to cool. Prepare stovetop stuffing according to package. Mix cream soups and chicken broth together. Set aside. Combine mayonnaise, stovetop stuffing, and diced chicken. Stuff the shells with the stovetop stuffing mixture and place into a baking dish. Cover with soup mixture and bake for about 20 minutes until heated all the way through. Top with shredded mozzarella cheese or parmesan cheese.
