A Couple of Our Favorite Recipes

We have 6 hens, so eggs are a breakfast staple in our home.


Some of our favorites are:

Egg in a Bread Nest

Ingredients:
1 egg, 1 piece of buttered bread (both sides buttered), 1 additional tablespoon of butter, salt/pepper to taste.

Directions:
Cut our circle in bread with small cookie cutter, pre-heat non stick skillet over medium heat. Place bread in pan, place tablespoon of butter in the "hole" of bread, crack egg into the "hole". Flip after 1-2 minutes and cook an additional 1-2 minutes. Serve with fruit!



BLT Quiche

Ingredients:
6 Eggs, 1 cup heavy cream, 6 strips of bacon, 1 large tomato (diced), 1 large leek, sliced and rinsed in water to remove any sand, 2 cups cheddar cheese, 1/2 teaspoon salt, 1/2 teaspoon pepper, 2 prepared frozen pie crust.

Direction:
Pre-heat oven to 375 degrees. Pan fry bacon and drain the majority of grease. Allow bacon to cool, then crumble and set aside. Sautee leeks in bacon pan until translucent and set aside.
Beat eggs and heavy cream, salt & pepper, pour into pie crusts.
Evenly divide bacon, leeks, tomatoes and cheese into egg mixture.
Cover with aluminum foil; loosely bake at 375 for 30 minutes.
Remove foil and bake an additional 15 minutes or until quiche is lightly brown and firm. Serve warm, room temp or cold!

Love the egg in a nest of bread, great name for it too. I made this for my kids a lot when they were little and I still love it. Here in So. California, we call them gas house eggs. Not sure where the name came from. Great recipe though!
