Eggs are high in protein and super versatile in how they can be used. We find eggs in everything from milk shakes and cakes to salads and quiche.
Here are some great idea's for egg recipes.
Scrambled Egg Delight
4 large eggs, onions, 1/4 cup bacon bits, 1/4 cup mushrooms, 1/4 cup oil cheese, 1/4 cup half and half, 1 tablespoon salt, pepper, and dry mustard. You can use the amount of onions and mushrooms and cheese to suit your taste.
Lightly brown the onions and mushrooms in the pan with oil. Beat the eggs and 1 tablespoon of half and half in a bowl and then add the mixture to the onions and mushrooms.
Scramble lightly and then add 1/4 cup of shredded cheese a pinch of salt, pepper and dry mustard.
Serves 2 People.
Spinach and Mushroom Quiche
8 large eggs, 1 box
frozen spinach,1 package mushrooms (any variety),1 onion chopped, 2 cloves garlic,1 tsp salt,1/2 tsp black pepper, 1/2 tsp red pepper flakes.
Thaw out spinach in microwave according to directions.
In a large oven proof pan, stir onions and garlic until soft.
Add mushrooms and spinach.
Cook for 10 minutes until heated through.
Scramble all 8 eggs in a mixing bowl.
Pour them into pan and mix all ingredients together.
Put the pan in the oven at 350 degrees for 20-25 minutes.
When finished, turn pan over and place eggs on plate.
Cut for serving, serves 4-6 people.
The following egg recipe requires about 30 minutes of prep time and about 30 minutes of cooking time.
Egg Slice Masala
6 hard boiled eggs, 1 large peeled and sliced onion, 1 sprig of finely chopped curry leaves, 1 tsp. of Ginger garlic paste, 1 finely chopped tomato, 1/4 tsp. of turmeric powder, 1 tsp. of red chili powder, 3/4 tbsp. of coriander powder, a pinch of cumin powder, a pinch of fennel seed powder, a pinch of garam masala powder, 1/2 tbsp. of tamarind paste, a pinch of salt,1 1/2 tbsps. of finely chopped coriander leaves, Coriander leaves - 1 1/2 tbsps, 3 to 4 tbsps of vegetable oil For coating of egg slices, 2, lightly beaten large eggs, 4 tbsp. of milk, 1/4 tsp. of pepper.
Heat 2 tbsp olive oil in a large saucepan.
Mix all the ingredients together.
Coat both sides of egg slices with mixture in a shallow bowl.
Place each coated egg slice in the hot oil (spacing them well) and cook on both sides till lightly browned.
Remove and set aside on a plate.
Repeat with the rest of the egg slices.
In a heavy bottomed pan, add the left over oil (after shallow frying) and heat. Add more oil if required.
Add chopped onions and sauté for 4 minutes.
Add ginger-garlic paste and sauté for 3 minutes.
Add curry leaves and mix.
Add red chili powder, turmeric powder, fennel seed powder, coriander powder and cumin powder and mix.
Add the chopped tomatoes and fry for 4 minutes or till oil separates.
Add 1 1/2 cups of water and bring to a boil.
Reduce flame and add the tamarind paste and fried egg slices and cover. Simmer for 8-10 minutes.
Add the garam masla powder and mix.
Remove cover and cook until you achieve the desired gravy consistency.
Place in serving bowl. Garnish with fresh coriander leaves and serve with steamed rice, flavored rice or rotis.
4 Whole eggs, 1/2 teaspoon of nutmeg, 1 Big white onion, 4 slices of Gouda cheese, 1 Tablespoon of butter, 1 Tablespoon of sugar, 1 Teaspoon of salt, and Ground black Pepper.
Chop the onions in small pieces and cook with 1/2 tablespoon of butter (reserve the other half) and the sugar on low heat for 5 minutes in a flat frying pan.
Add the nutmeg and cook for additional 2 minutes.
Chop the slices of cheese in small pieces and mix with the eggs and the salt.
Add to the frying pan without moving it (so that the onions stay at the bottom) and cover it.
Cook on low heat until the upper surface is fully cooked. Serve hot.
This egg recipe is for 4 servings.
Brunch Egg Bake
10 eggs, 1/2 cup shredded mozzarella cheese, 1 small can of green chilies, 1/4 teaspoon salt, 1/4 teaspoon pepper.
Scramble eggs in large mixing bowl.
Add cheese, green chili’s’, salt and pepper.
Pour into a lightly greased 9"x 12" pan.
Bake at 350 degrees for 40 minutes, or until edges begin to brown.
Perfect Egg Salad
8 hard-boiled eggs, 1/2 cup chopped celery, 1/4 cup Dijon mustard, 1/4 cup mayonnaise, 1/4 teaspoon salt, 1/4 teaspoon pepper,
Mix mustard and mayonnaise.
Add celery, salt and pepper.
Chop eggs and fold eggs into celery mixture.
Serve on lightly toasted bread or as a sandwich.
