NOTE: In all Chicken Recipe's, the chicken should be cooked to an internal minimum temperature of no less than 165 degrees F. Although it's rare, you can get salmonella from eating under cooked chicken.
Chicken Bacon Ranch Pasta Salad
3 Lg. Chicken Breasts, 1/2 cup mayo, 16 oz. sour cream, 1 lb. bacon, 1 lb. medium shell pasta, 1 packet ranch dip seasoning.
Cook pasta according to directions.
Grill or bake chicken breasts until cooked to an internal temperature of 165 degrees.
Cook bacon, drain fat and crumble.
Mix sour cream, mayonnaise and ranch seasoning in a large bowl.
Add chicken, pasta and bacon to the mixture.
Refrigerate for 1 hr. before serving.
Loaded Baked Potato Chicken Casserole
Boneless, skinless chicken breasts, red skin potatoes, bacon, cheddar cheese, sour cream, butter, green onion (chives), and salt & pepper.
The quantities are adjustable to taste and number of servings.
Bake the Chicken at 450 degrees for 30-40 minutes. The only seasoning they need is salt and pepper. Then cut into cubes or strips when it is done.
Peel, cut, and boil the potatoes.
Fry the bacon.
Use a casserole dish, lightly grease the bottom.
Layer the potatoes in the bottom, followed by shredded cheddar cheese, the fried bacon, and the baked chicken.
Put into the oven at 350 degrees just until the cheese melts and everything heats up. Then when it is out...just top it with sour cream, green onions (chives), and salt and pepper.

Baked Sun Dried Tomato Chicken
2 pounds of boneless chicken, one cup sun dried tomatoes, 1/8 cup olive oil.
Place chicken breast, sun dried tomatoes and olive oil in a large bowl and mix well.
Pre-heat oven to 400 degrees.
Place chicken mixture in glass baking tray.
Bake for 40 minutes or until 165 degrees.
